Arc @ UNSW is an incorporated company limited by guarantee governed by a Board of Directors of 15 people. Arc is a voluntary student membership organisation that provides recreational, cultural, representational and retail services to the students of the University of New South Wales (UNSW). The organisation operates as a commercial entity to maintain financial viability and to provide student services and programs for members.
Arc @ UNSW directly employs approximately 60 staff on a permanent basis and approximately 200 casual employees. The organisation also utilises the time and resources of a large number of student volunteers to administer programs and events. Day to day management of the organisation is performed by the CEO who reports to the Arc Board.
The CEO is supported by the Executive team accountable for operations of the organisation at both campuses. The Cost of Living unit is committed to supporting students in the expansion of food security, financial wellbeing and accessibility initiatives.
Job Description
The Cook is responsible for supporting the day-to-day operation of the CANTEEN kitchen. From this kitchen, CANTEEN delivers a subsidised catering service for students on the UNSW campus, where students can reliably access a nutritious meal for $5. CANTEEN’S vision is to be resourceful, think outside of the box and aim to use creativity to be able to affect the community we serve as much as possible, both in volume and quantity.
The Cook is accountable for maintaining high standards of food quality, efficiency, and presentation while adhering to safe food handling practices under the guidance of the food and beverage manager and chef on duty, as well as complying with all relevant Work Health and Safety (WHS) and Food Safety legislative requirements. The position operates within a high-volume, fast-paced kitchen environment and supports effective service delivery through teamwork, organisation, and attention to detail.
KEY TASKS AND ACCOUNTABILITIES
The main duties of this position include:
Bulk cooking.
Ensuring food is prepared according to standard recipes and pre-planned menus.
Maintaining a clean and safe working environment.
Have a complete understanding of Food Safety legislative requirements and manage Food Safety in accordance with these requirements.
Opportunity to participate in planning menus and developing recipes.
Assisting in stock rotation and informing managers on low supplies for re-stocking and ordering.
Assists with stock take of kitchen stock on a weekly/monthly basis.
Ensuring proper storage of perishables and appropriate stock rotation is carried out
Fills temperature logs, cleaning schedules and other forms as required by the food safety plan.
Desired Skills and Experience
Certificate II+ in commercial cookery or similar
Strong 'can-do' attitude, co-operative and strong work ethics
2+ years of experience in a commercial kitchen environment
Great knife skills and efficient with tasks
Must hold a NSW Food handlers' certificate
Knowledge of WHS and Safe Food Handling practices, as well as a willingness to complete WHS training and other training as required
Ability to follow direction and instruction accurately and efficiently and to work unsupervised
Experience in similar position with a high-volume catering, banqueting or large food operations
Passion for food and exceeding customer expectations
